INGREDIENTS |

| FILLING (For one pie) Eight large peeled and sliced apples 3/4 C. sugar 3 tsp. cinnamon 2 T. flour |
PIE CRUST (Makes 5-6 balls of dough) 4 C. flour 1 1/2 C. shortening 1 T. sugar 1 1/2 tsp. salt 1 tsp. baking powder 1 beaten egg 1/2 C. water 1 T. vinegar |

OVEN TEMPERATURE INSTRUCTIONS
Preheat oven to 350 degrees
PIE CRUST INSTRUCTIONS
In a large bowl, blend shortening and flour with a pastry blender (or a fork) until the mixture is crumbly. Mix in the sugar, salt and baking powder.
In a small bowl beat an egg. Then mix in the water and vinegar. Add the liquid mixture to the dry mixture. Blend (kneed) all ingredients together into a large ball. The crust should be smooth and not sticky. Add a little more flour if needed. Divide the dough into five or six balls. Freeze unused pie crust for future use.
On a dry, floured surface, roll out one ball of dough. Fold the crust in half. Then fold it in half again. Place the folded crust into a pie pan with the point in the center. Open the crust up and position it in the pan. There should be about a half-inch of crust overhanging the rim of the pan. Use a fork and prick holes into the bottom of the crust and along the inside edge (This helps prevent the crust from cracking).
Roll out another ball of dough for the top crust. With a sharp knife, carefully cut three small "S's" into the center of the crust. Set aside.
FILLING INSTRUCTIONS
Mix sugar, cinnamon, and flour together. Add the apples. Blend all ingredients together. Pour into the pan with the prepared crust.
FINISHING INSTRUCTIONS
Place the other layer of crust on top of the filling. Tuck the top crust’s edge under the bottom crust’s edge. Pinch the edges together creating seal. Sprinkle a little sugar, or sugar and cinnamon mixture onto the top of the pie crust (optional).
BAKING INSTRUCTIONS
Place pie into the center of the preheated oven (350 degrees). Bake for 45 min. to one hour, or until crust is golden brown and the filling is bubbling. Oven temperatures may vary so check the pie after 40 minutes.
Take the pie out, let it cool just a little. For best results, serve while still warm with ice cream!
